About The CodFather

The Codfather was re-established in 2013 by Juliano and Matthew, who had a vision to modernise the fish and chip shop industry. Matthew who comes from a second generation Fish and Chip family, who’s father, Peter Marks was the original owner of The Codfather, hopes to follow in his father’s legacy, having turned The Codfather into an award winning fish and chip shop, attracting media attention. Matthew hopes to carry on this legacy by bringing in the families secret batter recipe and traditional techniques, previously used by his father.

Juliano, who shares the same passion and love for the fish and chip industry has worked closely with Matthew and his father, for 6 years gaining invaluable skills and training along the way. Juliano has been able to modernise The Codfather by bringing in new and fresh ideas such as, loyalty cards, a website and the introduction of the latest technology in frying equipment, making the perfect partnership and a combination like no other. The couple are not going to stop there, having introduced meal deals and competitions; ‘be a winner, score your dinner,’ which has got the whole town talking about the brilliant, traditional, yet modern Codfather.

At The Codfather we bring you gluten free Fish & Chips every Wednesday at Jubilee Square! Here are answers to our most frequently asked questions:

What time is Gluten Free available?

On our Gluten free days, the menu is available ALL DAY! From open through until close. Just ask one of our lovely staff…

 

Are the Chips Gluten Free?

Yes, both of our Fish & Chips are fried in the uncontaminated fryer!

 

Is the equipment you use contaminated?

We use a deep cleaned, separated fryer, we take extra care to ensure all other equipment is not contaminated by using it solely for one purpose only.

 

What about your batter?

We use the same recipe as our usual batter to ensure you have the best tasting Fish, only we use gluten free flour.

 

Do we need to make order in advance?

No need to order in advance! You can pop in for your gluten free Fish & Chips as usual, we will be running the fryer’s all day ready for your order. However we do kindly ask, if you have a larger order, that you give us a little notice (or order on The Codfather app!)

Ethics

When it comes to the quality and sustainable food, the duo will not compromise, with Juliano stating that ‘quality is not expensive, it is priceless!’

Our potatoes are 100% British and are sourced from local farms. To ensure the highest quality of our chips, The Codfather hand-pick the potatoes every morning, making every chip, as quoted by Matthew, ‘crispy on the outside, soft on the inside.’

Our fish is sourced from sustainable, well stocked waters and are prepared daily using the finest cuts. The combination of The Codfather’s secret batter recipe, its high quality fish and latest technology frying equipment, ensures that it is served to the customer with a unique crispy batter and meaty, yet moist fish.

We are concerned about the environment, therefore all our waste oil is recycled and turned into bio fuel. This process involves the filtration of our oil and other techniques, in order to turn it into reusable bio fuel.

We have also begun to move away from plastic packaging by introducing Bio degradable boxers which has reduced our plastic waste by more than 70% we hope to achieve 90% plus reduction in the next coming years.
